budget lunch idea

We're still adapting here; the weather, the social life, the accent, the food, and also the budgeting plan. It's been almost 10 years living in Singapore that we're used to calculate everything in Singapore dollar -although in the beginning we kept converting Singapore dollar to Indonesian rupiah. That's what we are doing right now, converting everything from GBP to SGD - comparing prices, although that doesn't even matter at all.

While doing the converting everytime we do groceries shopping (haha), we try to plan our budget per week. For our first month, we did quite okay (it means: not so good), a bit loose here and there, and sometimes buying stuffs from more expensive supermarket because it's closer to home. What brings me here is that the fact some days we eat too luxurious, and in some other days we need to tighten our belt and cook whatever we have in the house. Plus, as much as we can, it has to be healthy.
We were happen to have chicken fillet, lemon, pok choy, and mushroom. I was thinking to cook something flavorful and easy, so I go with Lemon Chicken and Stir Fry Pok choy with Mushroom. Here is the easy recipe and the budget calculation.


Lemon Chicken (serves: 2)
Ingredients:
1 chicken fillet (about 200 gr)
2 tbsp of lemon juice (about 2 small lemons)
4 cloves of garlic, minced
soya sauce
2 tbsp of all purpose flour
vegetable oil
5 tbsp of water
Salt and pepper

Method:
1. Cut chicken into cubes. Then put it into a medium bowl. Marinade with garlic, flour, and enough soya sauce (I didn't measure how much, but you can pour as you like, as long as the chicken are covered). Leave it for at least an hour.
2. In a pan, heat up vegetable oil. Once it's hot, fry the chicken in medium heat until it's cooked through.
3. Put the chicken in the plate with kitchen towel, to absorb excess oil.
4. Heat up another pan. Mix lemon juice and water, bring to boil. Put the chicken into the pan and cook it in lemon water, for about 5 mins or until the lemon water absorbed into the chicken. Add salt and pepper, to taste.
5. You can garnish it with sesame seed. Serve hot.


Stir Fry Pok Choy with Mushroom (serve: 2)
Ingredients:
1 package of pok choy
2 cloves of garlic, minced
1 clove of shallot, sliced
8 pcs of button mushroom
sesame oil
soya sauce
1 tbsp olive oil
Salt and pepper

Method:
1. Cut pok choy into big pieces, leave the hard part. Slice each mushroom into 2.
2. Heat up a pan with olive oil. Once it's hot, stir in garlic and shallot. Cook until fragrant.
3. Cook mushroom until soft enough, and last cook pok choy.
4. Add in sesame oil, mix well. Then add in 1 or 2 tbsp soya sauce.
5. Add salt and pepper, to taste.
6. Serve hot with warm rice.

Budget calculation (exclude condiments, spices, and rice):
- Chicken, 1kg for £5. So, it's about £1 for 200gr.
- Lemon, 6pcs for £1. It's about £0.20 for 2 lemons.
- Pok choy, 1 package for £1.65.
- Mushroom, 1pound for £0.85. It's about £0.20 for 8 mushroom.
Total: £3.05 for 2 pax!
