recipe | spicy thai sauce chicken wing

i have a lot of chicken wing pieces on hand, since last week i only cooked a few pieces of it. rather than leaving the chicken longer in fridge - and also because i'm too lazy to go out for lunch, i planted an idea since early morning to cook simple using whatever i have in the kitchen.

basically, i only use 6 ingredients in the recipe, which make it so easy and simple (and less dirty dishes, of course).

recipe: spicy thai sauce chicken wings
(serving: 2)

ingredients:
8 pcs chicken wings (or as desired, you can adjust the other ingredients based on how many pieces of chicken you are using)
1 cup of thai chill sauce
2 tbsp lemon juice
2 tbsp olive oil (i use extra virgin olive oil)
2 tbsp grated ginger (i use ground ginger)
3 pcs red chili (chopped)
1 tsp minced garlic
sprinkle of cayenne pepper (optional)

method:
1. in a bowl, mix chicken wings, thai chill sauce, lemon juice, olive oil, ginger, and garlic. cover the bowl with wrap or aluminium foil and refrigerate it for minimum 2 hours.
2. preheat the oven 240 degree C.
3. mix the chopped chilli into the bowl.
4. place the chicken in a baking dish, make sure you preserve the marinade for later. (optional: sprinkle some cayenne pepper on top of the chicken)
5. cook in the oven for 15 mins. marinate the chicken once again, flip it, and marinate the other side.
6. cook again for another 20 minutes or until the chicken cooked.
7. enjoy it with warm rice.
