applause for this cereal!

i've always spent my lazy days by eating cereal with fruit and milk, that's the easiest way to get through the mornings without getting too much trouble and dishes to wash. and it came into my mind that perhaps at some points i need to make "unlazy" cereal, just to prove myself that it's worth to spend more time doing some good taste cereal for the morning (didn't say that my usual cereal are not good; they were the saviour for the sleepyhead, to be honest).



it took extra time of course, but since i didn't mind to wake up a little bit earlier, it was still on breakfast time when it's ready. these small little cookies are tasty! small cookies with cold milk and frozen blueberries.. i had a happy morning!

ingredients:
1/2 cup coconut milk (or soften butter)
1 1/4 cups wholemeal flour
3/4 cup oats
1/8 cup sugar
1/4 cup brown sugar
1 tsp vanilla extract
1 egg
1/4 tsp salt
1/2 tsp baking soda
1/2 cup mini chocolate chips

method:
1. combine the wholemeal flour, oats, baking soda, and salt in medium bowl.
2. beat coconut milk, vanilla extract, sugar, and brown sugar in large bowl until creamy (i did it around 4 mins). add in egg and beat until fully combined.
3. gradually add in the flour mixture into the bowl, mix till it's well combined. then, add in chocolate chips.
4. divide the dough into half. lay plastic wrap (about 50cm length) on the table, roll in the dough on top of it. wrap the dough and continue to roll until it form a long log with diameter of 3cm. continue with the second half of the dough.
5. secure the wrap, then put it inside the freezer for about 20 mins.
6. meanwhile, heat the oven 176 deg C. line two baking sheet on the table.
7. remove the dough from the freezer, unwrap the plastic. with a sharp knife, cut the dough in 1cm to 1.5cm thickness. form a ball in each dough and place it on the prepared baking sheet.
8. bake for 5-7mins or until it's getting a bit brownish.
9. wait until it's cooled down before serve it for breakfast.
(10. or of course, you can just eat it for snack)
