recipe | egg muffin with chicken and cheese

few months ago, while yos wasn't around, i was too lazy to go out and decided to make quiche without crust. i used whatever ingredients i had and measured intuitively. as predicted, it didn't turn out to be too successful, though it was edible.

coincidentally, a few days ago, i found egg muffin recipe and it reminded me with my quiche without crust! :D for nostalgic-sake, i made the egg muffin for weekend's breakfast and it tasted so good.

i made some adjustments to the original recipe, just because i had chicken & cheddar cheese leftover, but i had no bell pepper in stock. all the ingredients are actually replaceable, as long as the proportion is still the same and doesn't change the main ingredients' measurement.

i made half dozen of egg muffin and planned to eat a pair per day, but it was just a utopia. we ate it in one morning and didn't feel guilty at all.

3 eggs
1/4 cup milk
1/4 cup chopped chicken
1/2 cup mixed vegetables
1/2 cup grated cheddar cheese
1 tbsp red onion
1/4 tsp salt
1/8 tsp pepper
unsalted butter or vegetable oil

- preheat oven 175deg C
- mix egg, milk, salt, and pepper until well combined
- add in cheese, vegetables, chicken, and red onion. mix well.
- spread butter/veg oil on the muffin tray
- spoon the mixture evenly into the tray
- bake for 25mins
- cool it down for 5mins, then enjoy :)
