lemon

i bought 5 lemons few weeks ago and stored it in the refrigerator. initially, i was going to bake strawberry shortcake with lemon zest in the recipe, and in the end - i don't know why - i haven't got any chance to bake it. and out of sudden, i came across this pretty recipe and decided to bake it: lemon and poppyseed biscuits ~ i made some adjustments and substitutions on the ingredients; instead of using poppy seed, i used sesame seed. the appearances maybe different, but it tasted the same good.



here is the recipe! (with my adjustments)

ingredients
150gr unsalted butter
1/2 cup caster sugar
1 egg
2 cups plain flour
1 tsp baking powder
1 tbsp sesame seed
1 tbsp finely grated lemon rind
1 tbsp lemon juice, plus extra for toppings
icing sugar

method
1. preheat oven to 180 degree C. using a mixer, beat butter and sugar until pale and creamy. add egg. beat to combine.

2. sift flour and baking powder over the butter mixture. add sesame seed, lemon rind, and lemon juice. stir to combine. roll level tablespoons of mixture into balls. place balls, 5cm apart, on prepare baking trays (place baking sheet on the baking tray).

3. bake, one tray at a time, for 12 to 15mins or until golden. cool for 5 minutes.

4. for toppings, sift the icing sugar into a bowl and mix with enough lemon juice to make a runny icing. drizzle the lemon icing over the biscuits.

5. serve and enjoy with hot tea! :)




p.s.: yos' mom likes this sooo much. she even suggested me to sell this biscuits and wrap it in pretty packaging! oh, maybe i will. :)
