recipe | yoshi mochi and kinfolk

.. he has a thing with mochi --- that, i'm sure --- because there's a childhood story behind his mochi's obsession.

when i saw mochi article in kinfolk, there was an 'enlightenment' in front of my nose. and i was almost jumping while saying, "it's a simple dish! i'm making it for you!" to yos.

i followed and adjusted the ingredients' amount by using two recipes, one with coconut milk and without coconut milk.

for mochi:
1 cup mochiko
7 oz coconut milk
less than 1/2 cup of sugar
1/2 tsp vanilla powder

for the sprinkling:
1/2 cup of potato starch
1/4 cup of sugar
1/2 tsp salt

for filling:
chocolate bars, softened. (optional)

1. mix all the ingredients for mochi, stir until smooth
2. prepare a microwaveable dish, grease with vegetable oil. pour the mochi batter into the dish.
3. microwave with 70% power, for 4 minutes or less.
4. let it cool for minutes.
5. combine the potato starch, sugar, and salt in a bowl.
6. cut mochi using knife (before, cover the knife with flour so that it won't stick to the batter).
7. roll the pieces in the potato starch mixture.
8. fill in the softened chocolate bar in the center of mochi. close it up. and roll it once again in the potato starch mixture.
9. arrange in the serving dish.
